Charred Peach and Basil Salad

This is a recipe I saw in a magazine which prompted me to do an unusual thing - buy a cookbook from an author I didn’t know without having looked through it first.
The cookbook is Crave by Ed Smith, with recipes organised by flavour profile, which was a concept I found quite interesting. Will let you know how I get on - but so far I was very pleased with this recipe.
It would certainly not do as a meal for two for John and I, but as a late afternoon snack with a girlfriend after we’d had a substantial brunch, it hit the spot.
I was unable to get burrata from any local suppliers but the local Sicilian restaurant did have fresh buffalo mozzarella and my friend and I both agreed it was very different, in a good way, to the ordinary supermarket mozzarella we’re accustomed to. A bit fresher, texture lighter and more similar to a goat’s cheese. I’ll keep trying to find a burrata for another time.
